Question for the classical nerds, ELI5 the idea behind differing works and arrangements:

These all appear to be the same conceptual entity to me.
1) What exactly is a "catch-all?" It says unknown arrangements; does this mean this is a good choice if the song is played as say, a loosey-goosey improv guitar solo that mimics it?
2) I'm assuming the "organ" variety is for anything played on organ, but what if the organ is improv ala point 1? Would this then go into "catch-all?"
3) Why not just link to the big-boy main work? Why have multiples?
